Currently in Russian Federation issues of quality and safety of food products, prevention of possible diseases connected with their consumption and assurance of citizens’ health become more actual. These issues are interest of each consumer, that is why the chief target of any enterprise producing food products becomes assurance of food product safety. Any enterprise of food industry shall be interested in preventive measures on prevention of production and further realization of poor quality and unsafe food products not only from economic point of view but also from the point of own image cultivation.

Within this context in the first place on food industry enterprises are being developed management systems providing food safety on all stages of production and reducing of possible risk for consumers. Such systems mostly are built on HACCP (Hazard Analysis and Critical Control Points) system principles. HACCP is an instrument that helps enterprise to achieve higher safety level by production of food products.

International standard ISO 22000:2018 “Food safety management systems – Requirements for any organization in the food chain” is developed for food sector enterprises and unifies food safety management principles, HACCP concepts as well as quality management principles according to ISO 9001. So it is provided integration of quality and safety management principles in application to food products.

Certification program FSSC 22000 is developed by Foundation for Food Safety Certification (Netherlands) by support of Confederation of the Food and Drink Industries of the EU (CIAA).

For today FSSC 22000 certification program includes ISO 22000:2018 standard, technical specification (prerequisite programs) depending on enterprise scope of activity, e.g. ISO/TS 22002-1 for producers of food products and food ingredients vegetable-based and animal-based, BSI-PAS 222 for producers of pet food, ISO/TS 22002-4 for producers of food product package, ISO/TS 22002-3 for agricultural producers and FSSC additional requirements.

Presence on the enterprise of functioning and certified food safety management system gives an opportunity to demonstrate conformity to applied normative legislation requirements in respect of food safety, assess consumer requirements and demonstrate conformity to these requirements, efficient exchange information on food product safety with consumers and suppliers participating in the production and consumption chain which leads to customer satisfaction improvement.
